Our Mont Blanc Cheese is a true artisanal cheese.  This Bucheron / Crotin French style cheese is mold ripened in our cheese cave.  This cheese will thrill you with its triple crème, full bodied, intensely rich flavor and texture.  Aged Mont Blanc when cut will weep with a rich, creamy exterior coating its soft pate.

Our Trappiste Cheese is modeled on monastery cheeses.  A trademark raw milk cheese from our Nubian Goats, Trappiste is masterfully aged in our unique cheese cave.  This cheese is washed by hand in brine for 30 days during aging.  Trappiste Cheese is a sensation, acclaimed by several noted chefs.  Its semi-hard pate is ivory in color with a rich, distinctly nutty flavor with a buttery finish.

Our “Chevre Frais” has been placed in molds over night.  We then roll them in a special mix of herbs and freshly crushed pepper.  It’s interior has a gentle, sweet smell of goat’s milk.  These cheeses are exquisite in salads, great sliced on crustini or with crackers.

St. Gerome is similar to the cheese made in the Vosages Mountains of France.  It’s pungent smell and soft, smooth pate give way to a flavor of the sweet, rich, high protein raw milk made from the goats diet of organic clover.  This meticulously made golden rind cheese is turned twice per day and aged in our cave for at least 60 days.

Our Jersey Maid Reblochon is made in the finest French tradition. The name derives from the word “reblocher”, which means “to pinch the udder again”. This is because it is made from the thicker, richer milk of our Jersey cows.  It’s natural rind has a peachy hue and is mottled with light blooming.  It’s fresh clear aroma from the mold gives way to the pate that is moist, smooth and incredibly creamy.  The flavor is rich and buttery with a long deep note of roasted grain on the finish.  Pair our reblochon with Cabernet Sauvignon or Rieseling.

Often just a day from the cow to the table, this is the freshest cheese you can imagine.  Light creamy and straightforward, our “Fromage Frais” is complex in its flavor profile and a sumptuous addition to any menu.  It is an incomparable dipping cheese, its versatility is its strength being a knockout on a toasted bagel with or without jam.  It will make the most incredible stuffed shells or lasagna you can imagine.  Try it as it is or mixed with fresh horseradish, chives or fresh basil as a condiment for steak, baked potatoes or veggies.  Our fromage frais when chilled to near frozen and served by scooping it with a melon baller in a dessert cup and topping it with walnuts and drizzled with hot maple or chocolate syrup will dazzle your guests as an end to a memorable evening.  One good customer of ours says “to heck with all of that, just give me a spoon!”

Wow we did it again!  Our recent World Gold Medal winner in the 2010 World’s Jersey Cheese Competition repeated this honor from 2008.  It is an elegant, soft, mold-ripened cheese.  Made with our Jersey cows’ milk and cream harvested from our mountainside pastures of clover and wildflowers that lend it a rich hint of honey.  The texture is creamy and luscious with a subtle, tangy flavour.  Neige en Été or “Snow in Summer” as its name implies will melt in your mouth with its triple crème texture.  It is as well suited served with freshly roasted garlic and crostini as an appetizer as it sis with grilled asparagus, red peppers or other veggies.  Neige en Été makes a remarkable dessert cheese as well.   Try serving it with raspberries or ripe pears and pecans drizzled with a raspberry or mint coulis or maybe drizzled with caramel, chocolate or maple syrup.  Pair it with a Cabernet or a Chardonnay.

Our soaps contain NO processed animal fats, chemical preservatives or dyes.  We rely only on ingredients found in nature for their skin friendly and naturally hypoallergenic qualities.  Ingredients:  Pure fresh Nubian goats’ milk, saponified olive, coconut, palm & canola oils, shea butter and 100% pure essential oils.  Our popular scents are Charlemont Woods, Geranium Bouquet, Lavender, Sage & Citrus.  The milk from Nubian goats on average has the highest content of milk fat, proteins and milk solids of any of the popular breeds of dairy goats.  It is loaded with nutrients and has a rich, creamy texture giving our soaps unmatched luxurious quality that is extremely healthy for the skin.  All of our soaps are hand crafted and hand cut with pride and care.

All are made carefully and slowly in small batches then quickly preserved for unmatched quality. We handpick our own fruits and select only ripe, high quality fruit for our jams and jellies. Our Savory Spread is made from the fresh, rich and nutritious milk and cream of our Jersey cows with just the right amount of garlic, basil & herbs.  A Gold Medal winner in the 2008 World Jersey Cheese Competition, our Savory Spread is an exquisite triple crème cheese which is great on crackers, bagels, sandwiches or on a fresh warm baguette.  Try piping it into endive leaves or hollowed out grapes, cherry tomatoes or pickled red peppers.

The rebirth of a “Port Salute” style cheese.  Its incredibly creamy, rich and smooth texture and taste is from the rich high solids milk from our Jersey cows.  This cheese is remarkably versatile.  It is great served with fruit as well as melted over steamed broccoli or asparagus and great for au gratin recipes.  This cheese has garnered rave reviews in France as well as from most everyone who samples it.

Just about as good as it gets.  Our rich creamy textured Jersey Cheddar is masterfully aged and quickly sold out.  It is sun gold in natural color from Jersey’s creamy milk taken from summers grass pastures.  Handmade in small batches, each wheel of our farmstead cheddar is a true artisan masterpiece.  Jersey Maid Jersey Cheddar won a Silver Medal in the recent 2009 International Competition hosted by the American Jersey Cattle Association in conjunction with the World Jersey Cattle Bureau.
